4th of July Desserts: Quick, Healthy, Red, White + Blue

It’s the day before the 4th of July. All week long, Stacey Marsh has been showing you how to prepare the perfect party platter. Personally, I’ve also put a lot of time and thought into preparing the healthy and festive cuisine for my annual 4th of July BBQ, so you can imagine my dismay when I opened the freezer early this morning and realized that I didn’t plan anything to serve for dessert.

Uh oh!

Fortunately, with a little thought, a creative friend, an appetite for good health and, of course, a sweet tooth, I came up with these four extremely quick and very festive nutritious desserts.

1. The Speediest and Healthiest Celebration

In a huge bowl, mix sliced strawberries and blueberries. On the side, in another bowl, serve fat free Cool Whip next to the bowl of fruit. Red, white, blue and QUICK! If you have more time, you can mix the fruit and Cool Whip in parfait glasses. Also, if you want to add some white to the red and blue fruit, chopping pears or apples, with the inside part of the fruit face up works well.


2. The Speediest and Most Simplistic Celebration

It doesn’t get quicker (and easier) than this delicious no-brainer. Buy cartons of vanilla (or any other white flavor) Edy’s Slow Churned Fat Free ice cream and serve it next to a big bowl of red, white, and blue sprinkles. You can also serve the bowls of fruit and Cool Whip parfaits with the ice cream.

3. 4th of July Angel Food Cake

Angel food cake is a traditional 4th of July treat in my household. Not only is the cake delicious and a more healthier cake option out there, but it also happens to be served most deliciously in 4th of July spirit!  Buy an Angel Food Cake at your local grocery store (Trader Joes has a great one), and top it with fat free Cool Whip, blueberries, and strawberries. If you have more time, you can bake the angel food cake on your own. Additionally, you could mix the cake, fruit and Cool Whip in parfait glasses.

4. J-E-L-L-Oh My!

We found this recipe from our friends at and it is absolutely delicious! All you need is cubes of red JELL-O, cubes of blue JELL-O and a can of pear halves all chopped into a big bowl. Keep in mind: if you don’t have time to refrigerate your own JELL-O as the recipe calls for, you can buy already made JELL-O and cube that on your own.

But the fun doesn’t stop there! As we all know, beverages are a must when celebrating. Taking a little bit more time (not much!) to prepare festive drinks will go a long way with your guests. Enjoy!

Alcoholic Beverages:

  1. Good Old Fashion Vodka Cranberry. Mixed vodka and cranberry juice with a blue and white straw in each glass.
  2. Party in a Glass. This drinks includes: 1/3 oz. Blue Curacoa, 1/3 oz. Grenadine and 1/3 oz. Peach Schnapps. Layer the ingredients to give the drink its tri-color appeal. Start with the grenadine, then the peach schnapps, and lastly the blue curacoa.
  3. Rose Sangria. Check out this refreshing punch recipe from Rachael Ray.

Non-alcoholic Beverages:

  1. Patriotic Drink, courtesy of Family Fun Magazine. Pour ice in a tall glass and add cranberry juice or red Gatorade, wild berry flavored Gatorade Fierce and Diet 7 Up or Diet Sprite. The drink with the most sugar should be poured first.
  2. Think red: Any red drink such as Gatorade, fruit juice, or Kool-Aid.
  3. Think blue: Any blue drink such as Gatorade, fruit juice, or Kool-Aid.
  4. Keep in mind: With the help of red and blue food coloring, any clear beverage can become patriotic in a flash. Freezing red and blue water for festive ice is always a nice touch.
