Healthy Back-To-School Lunch Options: Rotisserie Chicken + Gouda FOLDit

It’s day two of our healthy lunch month and we’ve got a menu for your pickiest eater! Kim’s got a house full of them, and has learned to simplify her daughter’s lunch options to please her picky taste buds.

Lunch Menu Day 2

Hi, my name is Kim and for those of you who don’t know me, I write for a little blog called Mentally Inked. I’m a wife, mother and crazy person (because of the first two, I think).

I’ve been married for almost 10 years and not so sane for almost as long…

My daughter M (some of you may think that’s very blogger-like of me, but I actually call my daughter, Marissa Joleen, M) is going to be 7 in December. She is an only child and it shows. She just started the 2nd grade, well, today actually!

Marissa almost always buys her lunch at school, and while they try to make it healthier, it’s just not the best. She hasn’t tried any of the Flatout Bread yet, just the crisps (mmmmm…crisps).

We are picky people in our house – all of us, despite what hubs says. If one of us eats something, at least one of us won’t (usually M). We’re gonna make her lunch together, which is good since we all know that kids who make their own food are much more willing to try it.

Over the next few weeks, we’re going to keep our lunches extremely simple, so if they seem repetitive, I apologize. Something tells us there are other parents with picky eaters out there who can relate!

Bon appetit!

We’d love to hear your fresh perspective!

Kim, I didn’t know you were doing these lunches too! I was the same as M at that age, very picky. (Have you tried a split hotdog on the FOLD its? Yum!! She might like that. (I found nitrate-free hotdogs.)
