On Your Lighter Side

TGIF, everyone! Hope that there are some spook-tacular plans out there for this Halloween weekend. Today, we’re bringing you a frightfully delightful feature from our friend Jamie of Your Lighter Side.


Jamie recently posted a week’s worth of Flatout recipes and we were delighted when she gave us the opportunity to share her Stuffed Pizza Loaf with Flatout Wraps recipe with all of you.

Ingredients (makes 2-4 servings):

  • 1 Flatout wrap
  • 1/4 cup pizza sauce
  • 1/4 cup diced green peppers
  • 1/4 cup diced mushrooms
  • Additional diced veggies as desired
  • 1/2 cup shredded mozzarella cheese (or any other cheese you’d prefer)
  • 1/2 tbsp. pesto sauce (optional for dipping)

Directions (compiled based on Jamie’s post):

Set the Flatout wrap on an ungreased cookie sheet. Spread a thin line of pizza sauce along the center of the long side, about 2″ wide. Add your favorite pizza ingredients on top of the line of sauce. Jamie suggests green peppers, mushrooms, sundried tomatoes, pepperoni, ham, olives, feta cheese or anything else you feel makes for a good pizza.

Once toppings are in place, add cheese. A final, small line of pizza sauce holds the shell in place, since moisture acts like glue for these wraps.

With a pair of shears or a sharp knife, cut lines at every inch at an angle from the edge towards the center of the crust without hitting the toppings. Jamie made about 7-8 cuts.

Begin folding strips inward and upwards, pressing lightly into the sauce (the sauce helps hold the strips in place. You can add a bit more sauce where necessary). Continue to the top, folding over the last pieces.

Once all flaps are folded, add a final, small topping of shredded cheese along the center. Bake at 350 degrees for 10 minutes. Then quickly broil until cheese on top starts to brown, about 2 minutes.

Let rest 5-10 minutes prior to slicing with a sharp knife. Present with a small smile (love this term from Jamie!) of pesto for dipping.

    I love Jamie’s recipes, and she’s the one who let me know about Flatouts. I make mine like traditional pizza (sauce, pepperoni, veggies, mozzarella). Love that they are so low-carb that I can eat an entire wrap pizza and not mess with my blood sugars. Yum!

    I’ve also been toasting them to make a low-carb cracker. So far I’ve spread them with butter and Stevia and olive oil with garlic powder and salt.
