Dinner Solutions For Your New Year Resolution

We’ve chatted about breakfast and lunch, but now it’s time to discuss healthy dinner ideas for the new year! Whether you are creating a full-blown feast or just looking for something quick and easy to get on the table in minutes, we’ve got your back. Breakfast may be known as the most important meal of the day, but for us, dinner shapes how the rest of the evening will go in terms of late-night snacking and dessert. A healthy, whole grain meal is key in keeping us satiated, and it helps when the meals are delicious, too!

Tomato-Basil Flatout Thin Crust Pizza

Ingredients:

  • 1 Flatout® Light Flatbread
  • 1/2 tomato, sliced
  • 1/2 Tbs chopped basil
  • 1 Tbs fat free balsamic vinaigrette
  • 1/8 tsp garlic salt
  • 3 oz part-skim, fresh mozzarella, sliced thin

Directions:

Marinate mozzarella, tomato, garlic salt and basil in Balsamic Vinaigrette for 10 minutes. Meanwhile, cook lightly oiled Flatout in 350°F oven directly on grate for 7 minutes. Top with marinade, return to oven and cook 7 more minutes. Remove, cut into slices and enjoy!

Grilled Ham and Mango Quesadillas (via Cooking Light magazine)

Ingredients:

  • 1/2 cup mango chutney
  • 4 multigrain tortillas
  • 8 ounces shaved deli ham
  • 1/2 cup (2 ounces) crumbled queso fresco
  • 3 tablespoons chopped green onions
  • Cooking spray

Directions:

Prepare grill or pan with cooking spray. Spread 2 tablespoons mango chutney over half of each tortilla. Top evenly with ham, cheese, and onions. Fold tortillas in half. Place quesadillas on a grill rack or pan coated with cooking spray over medium-high heat. Grill or cook 2 to 3 minutes on each side or until golden and cheese melts. Cut each quesadilla into 4 wedges.

Amazing FOLDit Big Juicy Burger

Ingredients:

  • 1 Flatout® Artisan FOLDit Flatbread
  • 1 hamburger or veggie burger (such as Boca or Morningstar)
  • Your favorite condiments (such as lettuce, tomato, red onion and blue cheese crumbles)

Directions:

Cook the burger as directed. Place on Flatout FOLDit and add condiments. Fold.

Alternative Cooking Option: Prepare as above. Place folded sandwich on grilling machine, close lid and cook for 1-2 minutes. Remove and enjoy!
